Our produce is picked at the peak of ripeness to ensure optimal taste, how it was intended to be. Our growing practices center on naturally generating and preserving soil fertility.
- Premium Taste
We select what we grow primarily based on flavor. Production is important, but, being food lovers ourselves, we want to grow the best tasting produce possible. Just as a fine wine might have many distinct tasting notes, we believe produce can offer a similar experience.
Therefore, we grow primarily “heirloom” varieties, meaning great, unique tastes that have stood the test of time. Maybe a lettuce Thomas Jefferson grew at Monticello or a cold-hardy tomato brought to the States by a Russian immigrant, heirlooms not only offer supreme taste, but also interesting stories that we love to share with you.

How we grow our produce plays a crucial role towards accomplishing our mission of land renewal and generating fertility. We accomplish this in several ways:

- Amending the Soil
Growing cover crops such as grains or legumes provides fantastic benefits for building up a healthy soil. The more research we do, the more we are impressed with the power of covers. In addition to growing covers we apply rich organic matter, many of which come at little or no cost to us. We use aged manure from our animals, farm-generated compost, leaves, mineral powders, and more. Each amendment provides different benefits to a healthy and diverse soil biology.
